Start Your Day Off Strong With These Bananas Foster Pancakes

If you’ve read my previous post, you’ll know that I’ve recently gone on a bananas foster rampage. It’s not that I WANT to get larger and not fit into my wedding dress, it’s just that that’s the way it happened, and what can ya do? I took the leftovers from that gooey drool-worthy bananas foster (hint: you can find the recipe here) and made some fluffy, also extra diet-like pancakes from scratch to match. This has been my go-to pancake recipe for years, so I’ve detailed it here below for you so it’s all in one place.

Bananas Foster Pancakes

Makes about 9, 1/4 cup sized pancakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tbsp white sugar
  • 1 1/4 cups milk (you can use almond or oat in a 1:1 ratio)
  • 1 egg
  • 3 tbsp SALTED melted butter (plus few tbsp extra for lining pan)
  • 2 tsp vanilla extract

Directions

  1. Turn burner on medium-low (usually 4) to preheat. Adjust the temperature to your stovetop as needed.
  2. In a small pan, (I always get crispier edges when the pan only makes about one pancake at a time), melt 1/2 to 1 tbsp butter. If you find the butter burning, wipe it with a paper towel and place more butter on the pan when you are ready to start forming your pancakes.
  3. In a large bowl, whisk together all dry ingredients (flour, baking powder, & white sugar).
  4. Slowly alternate adding milk, egg, butter, and vanilla extract while occasionally stirring.
  5. Combine ingredients until lumps are gone. Mixture should be thick enough to hold its shape, but not so thick that you can’t use a spoon to scoop out of the bowl (*see photo below).
  6. Using a 1/4 measuring cup, scoop one spoonful of the batter at a time onto your pan.
  7. When edges of pancake are crispy and bubbles begin to form on pancake, flip pancake using spatula (*the first one may not look as crispy as the rest, keep going)! You should see the pancake visibly rise when flipped (these guys are reaaaaall fluffy)
  8. Wipe the pan with butter before placing the next pancake on the pan.
  9. When desired number of pancakes has been made, top with bananas foster mixture
  10. Enjoy!

The empty plates following this meal were just evidence of how good these bad boys were. Our little pup Luna was so upset that she couldn’t have any, she just stood there batting her cute puppy eyelashes at me. I almost caved guys….almost.
