The Easiest Trader Joe’s Inspired Fajita Bowl You’ll Ever Make

If you’re at all like me, the end of the day marks your “what should I make for dinner” struggle. Luckily, I have my man Trader Joe to help me with this (seriously, gonna need a sponsorship for how many times TJ is mentioned). If you’ve never been (first of all, how dare you), you need to peruse down the Trader Joe’s frozen section, which has all the things you need on hand in your freezer for when that “I’m too lazy to cook but somehow also too lazy to leave the house” mood strikes.

Here you’ll find a recipe for a tex-mex inspired fajita bowl (think Chipotle, but healthier? Ish?) that’ll be ready for devouring in 15 minutes or less! (And best of all, it uses just 5 simple ingredients…. from Trader Joe’s obviously).

Ingredients

  • 1/4 cup Mexican Style cheese blend
  • 1 can (you’ll use 1/2 cup) black beans
  • 1 pouch (you’ll use 1/2 the pouch) Trader Joes Frozen Brown Rice OR 1/2 cup prepared brown rice of your choice
  • 1 bag (you’ll use 1/2 the bag) Trader Joes Fire Roasted Bell Peppers & Onions Blend
  • 1/4 cup fresh tomatoes
  • Note: *Though most of the ingredients here are from Trader Joe’s, they can easily be substituted with fresh peppers

Directions

  1. Cut pouch of rice along seam and place pouch seam side up in the microwave. Microwave for 3 minutes then set aside.
  2. While rice is cooking, open black beans with a can opener and pour entire can into a colander for rinsing and draining. Give the beans a quick toss to ensure the entire cans contents are rinsed.
  3. Once water runs clear (as opposed to the brown it starts as) through colander, place the rinsed beans aside.
  4. To prepare the frozen vegetables, preheat a non-stick skillet on medium-high (think 6 or 7) for one minute.
  5. Pour desired amount (1/2 of the bag worked perfectly for me) of vegetable mixture into pan and sautee, uncovered, for 3-4 minutes, stirring continuously.
  6. Add beans and tomatoes until warmed and soft.
  7. Season vegetables, beans, and tomatoes with salt, pepper, and garlic powder to taste.
  8. Spread rice into a large bowl and top with vegetables, beans, tomatoes, and cheese mixture.
  9. Enjoy your quick dinner and move on with your life!
